Today was a great day! I hope you all feel the same way!
I did a lot of new things today. For starters, I have now mastered riding a bike in a skirt in the rain. Comical, right? I typically ride my bike to work and today just so happened to turn into a storm day. Oh, well! The rain was much needed to help poor Mother Earth!
The second new thing I did today: try a veggie burger! And the verdict is…. (drum roll, please!) I AM HOOKED! I was always skeptical but I really enjoyed it! I even got the boyfriend in on the action, and needless to say, he and I both made it into the clean plate club! We had some rice, apple sauce, and salads with dinner as well. A+ meal if I do say so myself!
After dinner, the two of us started our work out regimen for the cycling race we are doing in September. We are following an 8 week plan and today was day number one. It was a lot of leg lifts just to build strength, and tomorrow is our first ride!
We left the gym, and then we added a few more things to the list of firsts for the day. Together, we made Raw Vegan Chocolate Chip Cookie Dough Balls. I have seen so much in the blog world about them, and everyone is totally right. They are amazing. Perfect little snack!
After the cookie dough balls, we then made another recipe I have been wanting to try. We made Cinnamon Roll Oatmeal Cakes. We made them mostly so I could have one for breakfast in the morning, but we had to try one this evening, too! Another great item to add to the list of easy to make, delicious recipes!
As I have more time, I hope to add new things to my list of firsts!

My favorite recipe as of late were for these monkey bread muffins that I made for my campers at work– Everyone couldn’t keep their hands off of them!
Yes, I know, I definitely should have tried them earlier! Now that I am cooking for myself, I have definitely been more open to new foods. And I loveeee monkey bread! Those sound amazing!

I just bought a donut pan in attempts to make some healthy treats… I made a Raspberry-swirl spice donut using clean ingredients minus the pastry flour as I had it on hand at home, and they turned out great! However since then I have tried making a coconut chocolate version with whole wheat and coconut flour, and I have not had so much luck getting the ratios right… second batch I forgot the sugar! lol… not meant to be I guess
Mmmmm those sound delicious! I can’t tell you the last time I had a donut! And I would definitely try the dough balls…totally worth it!

I love the spicy black bean ones – they’re fantastic with chipotle lime ketchup which is super easy to make. Let me know if you want instructions (I can’te vern say recipe because it’s so easy!).

I have never tried a veggie burger either, but I have been having the itch lately! I’m totally buying them next time I’m grocery shopping.
I’ve been having a lot of luck with quinoa recipes lately. I love quinoa!
Definitely try it! I never thought I would like a veggie burger, but man, was I wrong!
