As requested by a few readers, I have some additional pictures of Rex for your enjoyment!
Rex and I had a pretty successful day yesterday.
We threw some pork in the crock pot, and then we headed out on the trail for some quality running time! It was a tad chilly, but we got two miles in on the slushy trail.
We came back, washed and changed the sheets on the bed, did some other chores around the house, and then finished dinner.
Pulled pork has a big spot in my heart. I adore it. And it is so simple to make. Honestly, throw some port shoulder in the crock pot on low for 6-8 hours, shred it with two forks, and pour in BBQ sauce.
I am all about easy dinners. Especially because the quicker I am done, the more time I have to watch Parenthood. I’m obsessed. Currently beginning Season 2. Anyone else a fan of the show?

Dinner looks fabulous! I need to make some shredded pork. Do you add water or anything or just the pork shoulder? That corn looks good too – do you make that yourself as well? Oh, and Rexy is a cutie for sure!

I put about a cup of water in with the pork to begin, and then cleaned it all out before putting the shredded meat in the pot and adding the BBQ sauce.
As for the corn, it was VERY tasty, but I can’t say I did anything more than stick the bag in the microwave! Green Giant has new steamers and we loved this one — honey roasted sweet corn: http://greengiant.com/pages/SeasonedSteamersSubCategory.aspx
My favorite pulled pork recipe involves cooking the pork in a 1:1 mixture of coke or dr pepper and BBQ sauce! I know you have a soft spot for dr pepper…!
