Flower Placemats and Weekly Eats

Happy Hump Day!!!

Here’s what we have been noshing on this week! Notice the reoccurring placemats.  We have 2 striped ones and two flowers.  I guess I only eat with the flowers!

Let’s start with breakfasts:

Oatmeal with PEANUT BUTTER TOAST CRUNCH – talk about processed, sugary GREATNESS.  Paired with an apple and, of course, coffee!

Pancakes (egg, banana and cinnamon) with frozen fruit microwaved and smashed.

Dinners:

A take on chicken parm: spaghetti squash, spaghetti sauce, cheese, and chicken!

First time eating a Saladworks! Buffalo chicken salad and tortilla soup.  Both were super yummy!

First grilled chicken of the season Smile BBQ chicken, corn, and sweet tater!

Travis passed his Praxis test (for science teaching!) and I felt good about my interview so we went to Ruby Tuesday’s yesterday for dinner.  Favorite salad ever! Thanks for the well wishes on my interview!  No placemat there haha.

Turns out that my lunches are always boring: salad.  But at least I’ve had yummy cookies for dessert.  I was inspired by Liz and Alysia!

Chocolate Chip Banana Cookies

  • 1 cup oats
  • 2 ripe bananas
  • ~1/4 cup chocolate chips

Preheat oven to 350.  Mix all ingredients together well, spoon onto a greased baking sheet, and bake for 15 minutes.  The end.  Easy as pie (or cookies in this case…). I got 12 nice-sized cookies out of it, for approximately 50 calories each!

Nothing too special this week.  I have been lacking motivation to make food with coaching and this interview on the mind.  I see a lot more Crock Pot meals in our future!

English Muffin French Toast

I guess I was feeling really European yesterday! I know Travis loves French toast, and I do, too.  I realized yesterday that it has been forever since we have had it and decided to change that.  Because we rarely have actual bread (more rolls and pitas), I decided to try it out with an English muffin, and I was pleasantly surprised.

Seriously, nothing’s simpler than French toast!

Ingredients:

  • 3 English muffins, sliced
  • 1 egg
  • 1/3 cup egg whites
  • 1/3 cup milk
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • Maple syrup for tasting
  • Cinnamon sugar for tasting

Combine egg, egg whites, milk, sugar and vanilla, and whisk until even.  Soak muffins in mixture, and heat on a medium-heated, oiled pan. Flip muffins often until both sides are golden brown.  Cover in syrup and cinnamon sugar. Enjoy!

We had plenty of mixture for all three muffins.  We used the 100 calorie muffins, so if you used thicker ones, you may only be able to use two! Three worked perfectly for us: one for me, two for Trav!  Definitely hit the spot for me, and it totally reminded me of how good French toast is!

Releasing Stress

Things are finally starting to come together at work.  I remember posting not too long ago about the frustrations of not really having guidance through my position, but little by little, I am figuring out what I am supposed to be doing.  I even finally got all of my log-ins for email, grade input, etc.  FINALLY.

Pieces coming together at work is only one way that stress is starting to melt away.  Another plus has been enjoying the planning of my wedding.  Although, when trying on dresses, I was not pleased with the chub growing on my arms. It has pushed me to start doing Jillian Michaels 3o Day Shred tapes.  I did one the past two days, and yesterday, I also went on a two mile run with Travis! Short, but I ran the whole thing, which is my furthest run without a walk in over a month.  This 1/2 marathon is going to be funny…

Before the run, in my awesome new Ellie capris. Seriously love their clothes! (P.S. – join their clothing delivery list and get 20% off using this link!!). These capris never fell down and are so comfortable!

After the run, with my man!  Nice and sweaty… We have only run together one other time, and it was a 2 mile run for Haiti in which I had just been cleared to exercise after mono.  I walked.

I also decided that I didn’t like our old wedding website, and have started creating another one.  I love it so far! Click here to see it Smile.

We have had some good eats lately which makes me happy.  I made a new recipe from Reynolds called Backyard Barbeque Chicken.  Love making foil packets and having little to no clean up required!

Spicy, delicious, and paired perfectly with some baked sweet potato.

A few more awesome things to think about to keep life a little less stressful: I am lucky to be who I am, have amazing friends and family, and be safe.  I have a weekend with Trav’s family in Bethany Beach planned.  I got to see my favorite musician in concert this past week for the 8th time.

Music, especially Andrew McMahon and his music, never fails to make me a happier person.  He is the best.  He even played Konstantine which is everything I love in one song.  P.S. If you’ve never seen Buzzfeed’s article about Konstantine being released TEN YEARS AGO, then check this out.  TEN YEARS.  I have been obsessed with this man for TEN YEARS. There’s also a few videos of the song for those of you who haven’t heard it.  Listen.  P.S. I have the Live at Ventura DVD Concert and have had to buy a new one at one point because it wore out from so many watches.

Another Friday for me! Swim practice, teaching, potential happy hour, and then family time!!
