Cleaning Out the Freezer

Because my lease is over in less than a month, I’ve decided to start eating more foods from the freezer and clear that sucker out.  I will admit, there’s not that much in it to begin with, but traveling with frozen foods doesn’t really sound that enjoyable to me!

For dinners this week, I’ve been defrosting some frozen veggies and also leftover lentil patty that I had frozen.  Crumble the “meat” and top the veggies with apple sauce and cinnamon (I know, I’m strange…one of my fave combos since forever) and call it dinner.

There’s also been a lot of defrosted egg muffins, but when I don’t feel like defrosting, I can always go to Biscotti Café in Shippensburg with Hollie.  It’s pretty much “our spot”, and this week, it was even greater because it happen after we had a sleepover.  Hehe.  For some reason, we didn’t snap any photos together, but we did sleep on a queen size air mattress on my floor.  Oh, and we watched Catfish, which if you’ve seen it, it’s pretty crazy. 

And we obviously indulged in coffee and biscotti cookies.  And omelets.  And we both said no hashbrowns, but were served them anyway? Whatevs.  They wasted food!  I got cheddar and spinach and it totally hit the spot, as per usual.

Speaking of coffee, gingerbread K-cups are my dream come true.  And thanks to Trav’s mom, I scored some out shopping over the weekend! They are totally delicious, especially with a little vanilla creamer.

Plus, my new Christmas travel mug is also pretty awesome.  As much as I hate snow and being cold, I do love Christmas.

That’s my car before school yesterday morning.  Not looking forward to much more snow than that Sad smile  And now that I look at it..it’s hard to see snow on a white car with a white building in the background.

Oh ya, and 16 days until graduation. Thanking my lucky stars on that one – I’ve got a stressful week ahead, but at least I have a blogger meetup to look forward to on Saturday! Anyone in the Harrisburg, PA area – come meet up with us!

Happy Hump Day! I’m off to my first swim practice in almost 2 weeks hahaha.

Do you have any weird combinations that you enjoyed as a kid and kind of never did away with? I typically make this combination weirder at times like Thanksgiving when I then add mashed potatoes into the corn, applesauce, cinnamon mix.  Yes, I’m weird but totally ok with it.

Post-Sandy

HAPPY HALLOWEEN! I didn’t dress up this year, but let’s flashback 4 years!

I really and truly help all is well where you are and that Sandy wasn’t horrible for you! If you were one of the ones not so lucky, know that I am thinking of you and praying that everything gets pulled back together soon! What a devastating time for all! I am just so thankful I got out of New York City when I did! A few more hours and we would have not been so fortunate!

So how did I occupy myself during my two days off of work and school thanks to the storm?

Well, I headed to my home away from home while at school to spend time with the family who has been there for me for a few years now!

I wish I could say that I stayed true to my healthy eating that I did really well with last week, but I didn’t.. such is life.  There was Halloween candy (Reese’s nom nom nom), caramel apples, pizza…deliciousness! I guess it was like a mini vacation to me Smile

And after I went home yesterday morning, I did a lot of movie watching:

Can you guess by the picture what movie I finally watched? Avengers – and I loved it! Now I have to watch all of the other ones…

That was only one of the few movies I watched.  And I caught up on some of my shows.  I wasn’t too far behind though since some of my shows were cancelled yesterday during Sandy’s outrage!

Now, things are back to normal for the most part.  Hoping that it stays that way!

WIAW Time!

It’s the time again! I love looking at what everyone eats Smile.  Here’s what I had all day yesterday!

Breakfast came in waves while I was at work.  Started with coffee, followed by a LUNA bar, and then strawberries a little while later.

The new LUNA bars! I loveddd this one! I loved the sugary-ness on the top, and all of the flavors really complemented one another!

Lunch was also devoured while at work.  A wrap with spicy pepper hummus, romaine, cucumber, and green pepper! Totally hit the spot.

Post workout fuel:

My workout yesterday was a 3ish mile run, and two rounds of this:

  • 25 Squats 
  • 25 Burpees
  • 25 Sit-ups
  • 15 Push-ups
  • Rest 30 seconds between each exercise

Not too bad for just getting back into the workout swing of things.  Today, I have full intentions of swimming.  And since I have publicized it, hopefully it will get done!

Dinner was a random mixture of spaghetti squash, BOCA vegan burger, corn, peas, green pepper, salsa, and a tad bit of cheddar.  It made for a fabulous combination.

And for dessert, I had one two of the bars I made the other day.
