WIAW from the Beach

Being at the beach all weekend, I tried to squeeze in as many pictures of food as possible – but sometimes, it just wasn’t the first thing on my mind! Thanks to Jenn, here are the captured eats from the trip Smile

On the way to the beach, we stopped at IHOP! YUM, I freaking love it there! I ordered the SIMPLE & FIT Two x Two x Two which had scrambled egg substitute with two buttermilk pancakes and two strips of turkey bacon.  The menu said it was 400 calories, with some syrup…not too bad!

This is what we had for lunch each day.  Beach picnic! I had pulled BBQ chicken on a flatbread, Trav had turkey.  We each had an apple and some chips and pretzels.  Perfect beach lunch!

My favorite thing on the Bethany Beach boardwalk: shaved ice.  This is something I MUST get every time I am there.  They have a never-ending list of delicious flavors. I got the kiddie size with half cake batter and half cotton candy flavored, topped with marshmallow fluff.  AHHH sticky heaven on a hot day Smile  (You can partially see my burns in this picture, which I swear have now turned purple Sad smile)

We stopped a WaWa on the way home.  Now, I am a Sheetz girl through and through.  And those of you from PA may know the epic Sheetz/ WaWa battle.  But this sandwich was pretty darn tasty.  Chicken, cheese, lettuce, veggies, and ketchup on a wheat roll. Yum!

Thursday Thanksgiving

Howdy, y’all! Anyone find it odd that I am currently watching Enchanted (the Disney movie) on SyFy?

Well, nevermind that.  Throughout the course of today, I caught myself thinking about the many wonderful things I have to be thankful for on a daily basis.  Through my whole Lenten journey, another goal I had sent for myself is to recognize the beauty in the things that God has created for me and to find deeper appreciation for the life that I have.

I am thankful for puddle-less days of sunshine that follow days of dark downpour.

I am thankful for my health, because regardless of injury, my body is still healthy and allows me to accomplish many things day in and day out.

I am thankful for tupperware, especially mini containers and sandwich containers.  Both of which allow me to save some money and save the planet by not using plastic bags.

I am thankful that I do not have to work tomorrow morning and can stay up and watch cheesy TV and eat popcorn.

I am thankful for the Lorax and Ihop, for they are giving children recognition of what happens to the environment and provides seeds to plant trees to help.

I am thankful for the opportunity I was given to coach throughout this swim season. Tomorrow is the first day of their district swim meet, which means that the season will be ending this weekend.  I have enjoyed spending so much time with these swimmers and getting to know each of them. 

I am thankful for Amazon.com.  My goodness, I order so many things from them and their service is incredible.  Also, getting mail and packages can brighten my day, even when I am expecting the delivery!

I am thankful that I am one week away from spring break and spending time with my family.  Last year, I wasn’t given spring break due to student teaching, and I have not spent more than a weekend at home with my family in well over a year.

I am thankful that turning vegan for Lent has made me more aware of what I need to fuel my body and has introduced me to new meal creations, such as quinoa which I tried for dinner for the first time! I mixed it with some garlic, corn, peas, and peppers for a veggie fix! Loved it!

I know that I have so many more things to be thankful for, but that’s all I wrote down throughout the course of the day.  I guess I could also be thankful for people who do things like this:

Wonderful weekend! :)

Hola, amigos! Hope everyone had a terrific weekend! I have come to the realization that Saturday posts just don’t fit into my weekends, so here is a full recap!

Saturday morning, the BF and I woke up early (kinda, if you consider 8 early) and headed out on a long bike ride.  We used MapMyRide to map a 25 mile loop around the area, but with a minor detour it ended up being 28 miles! It was definitely a great ride!

After the ride, I went to see Annie Jr. in Chambersburg.  My 9 year-old mentee went to theater camp this summer, and I went to see her performance.  It was adorable, and she was so cute as an orphan. Afterward, Travis and I headed to Germantown, MD to spend some time with my sister and dad.  Saturday night was pretty low-key. We had a great dinner and then settled down to watch Life As We Know It. The movie was a cute romantic comedy for anyone who is interested in seeing it!

Today, we woke up early and went to IHOP! There isn’t one by my house in Shippensburg, so it is always a nice treat to go there.  They have good fit items which made me enjoy breakfast even more.  And then after IHOP, I had my first Trader Joe’s experience! Needless to say, I loved it! I think I need to go back already! :) Because we had other stops to make after the store, I couldn’t get anything cold.  I did get a lot of great snack foods, though.

After Trader Joe’s, we made a few more stops.  First, we went to Five Below.  I always find things there that I don’t need but buy anyway.  This time I got sunglasses, a cooler bag, and come paper clips.  The last stop we made was at REI.  I wish I had the money to buy all of the bike supplies and clothing there! I think I need a loan to buy everything I want but don’t need! Too bad they don’t give grants for those trying to buy exercise equipment!

We spent the afternoon lounging poolside before heading back to Shippensburg.  For some reason, there is never anyone at her pool! All in all, it was definitely a relaxing get-away, which was much needed after the long week of new student orientation at work!

I will be going back to my sister’s house in a few weeks.  Any must haves I should pick up at Trader Joe’s?
