WIAW from the Beach

Being at the beach all weekend, I tried to squeeze in as many pictures of food as possible – but sometimes, it just wasn’t the first thing on my mind! Thanks to Jenn, here are the captured eats from the trip Smile

On the way to the beach, we stopped at IHOP! YUM, I freaking love it there! I ordered the SIMPLE & FIT Two x Two x Two which had scrambled egg substitute with two buttermilk pancakes and two strips of turkey bacon.  The menu said it was 400 calories, with some syrup…not too bad!

This is what we had for lunch each day.  Beach picnic! I had pulled BBQ chicken on a flatbread, Trav had turkey.  We each had an apple and some chips and pretzels.  Perfect beach lunch!

Dinner the one day was easy chicken parm and pasta. Yum Smile

My favorite thing on the Bethany Beach boardwalk: shaved ice.  This is something I MUST get every time I am there.  They have a never-ending list of delicious flavors. I got the kiddie size with half cake batter and half cotton candy flavored, topped with marshmallow fluff.  AHHH sticky heaven on a hot day Smile  (You can partially see my burns in this picture, which I swear have now turned purple Sad smile)

We stopped a WaWa on the way home.  Now, I am a Sheetz girl through and through.  And those of you from PA may know the epic Sheetz/ WaWa battle.  But this sandwich was pretty darn tasty.  Chicken, cheese, lettuce, veggies, and ketchup on a wheat roll. Yum!

Sweat Pink Swag and Pasta Love

As I have mentioned before, I have been selected as a Sweat Pink Ambassador through Fit Approach, and I could not be ANY more excited.

My extreme excitement was heightened when I received my swag bag in the mail:

I did not waste any time and broke my sweat pink tank in with a 30 minute ride on my fluid trainer.

Notice the bike in the background? It has pretty much been my sole source of exercise lately, minus a few sets of abs.  Also, I REALLY need to get some sunshine! I look like a ghost.

Oh ya…and I actually made something I pinned on Pinterest for dinner last night! And believe me when I say it was simple and yummy!  Then again, I didn’t make the exact recipe.  Rather, I just kind of threw everything together and called it a day.  No specific measurements for me.  And I used pre-made bread crumbs and rice pasta rather than linguine.  Still really tasty!

Garlic Bread Crumb Pasta

Ingredients
  • 1 slice day-old hearty white bread
  • 2 tablespoons olive oil, divided
  • 6 garlic cloves, minced
  • 8 ounces uncooked linguine
  • 1/4 cup chopped fresh parsley
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation
  1. Preheat oven to 250°.
  2. Place bread in a food processor; pulse 10 times or until coarse crumbs measure 2/3 cup. Place breadcrumbs on a baking sheet. Bake at 250° for 30 minutes or until dry.
  3. Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium heat. Add garlic; cook 30 seconds, stirring constantly. Remove from heat, and let stand 5 minutes. Return pan to heat. Stir in breadcrumbs, and cook 6 minutes or until lightly browned, stirring frequently.
  4. Cook pasta according to package directions, omitting salt and fat; drain. Place pasta in a large bowl. Add 1 1/2 teaspoons oil, breadcrumbs, parsley, lemon juice, salt, and black pepper; toss gently to combine. Serve immediately.

Totally hit the spot, and I will definitely be having leftovers for lunch.  Leftovers make me super happy.

As does my amazing boyfriend, who left me this note before he left yesterday.

Did you ever have notes in your lunchbox growing up? I totally miss that.  My mom would always do it (even in high school as I was a packer all day every day) on my birthday or days of big tests.  I miss it.

WIAW At Home!

Happy What I Ate Wednesday! Hats off to Jenn!

It has been easier than expected to stick to a vegan regimen while at home.  My parents have been very willing to accommodate me and were understanding (for the most part) of my decisions.  The hardest part was deciding what to order while at Olive Garden… I got angel hair and marinara…not the most exciting but still good!

I set a few goals for my week at home:

  • Make at least 3 new recipes
  • Complete all of my assignments to date
  • Finish the book I have been reading since Christmas

I am 1/3 way through my first goal.

I made my own granola for the first time! It was the easiest thing in the world.  I will have to post a recipe soon!

I also had an apple with some of this delicious stuff! Holy cow was it tasty…and I ate all of it in 5 days. Oops.

I guess you could say that I made a new recipe for dinner.  Vegan pizza dough, olive oil, minced garlic, salsa, green pepper, and olives.  Baked until brown and slightly crispy.  It was muy delicioso!

For dessert, I tried this stuff out! Honestly, you could have given me this stuff and I would have had NO idea that it was vegan.  It was sooo freaking yummy.  Amazing.

Well, back to my goals.  As for the homework goal, I have taken 2 tests/quizzes online, and have finished one project.  I only have one more tihng to work on and a little more catch-up to do by Tuesday.

My last goal was to finish a book that I have been reading forever.  I started reading “Born to Run” around Christmas.  It’s not because it’s a bad book, in fact it’s awesome.  I just have been so freaking busy lately.  I have read like 100 pages in the past day and it’s really good.  I should hopefully finish it soon since I can sit out in the warm sunshine and read!!  This weather is incredible.

Ok, so for those of you who are obsessed with Andrew McMahon like I am, try playing this game.  I may have answered about half of the songs…I fail.
