Flower Placemats and Weekly Eats

Happy Hump Day!!!

Here’s what we have been noshing on this week! Notice the reoccurring placemats.  We have 2 striped ones and two flowers.  I guess I only eat with the flowers!

Let’s start with breakfasts:

Oatmeal with PEANUT BUTTER TOAST CRUNCH – talk about processed, sugary GREATNESS.  Paired with an apple and, of course, coffee!

Pancakes (egg, banana and cinnamon) with frozen fruit microwaved and smashed.

Dinners:

A take on chicken parm: spaghetti squash, spaghetti sauce, cheese, and chicken!

First time eating a Saladworks! Buffalo chicken salad and tortilla soup.  Both were super yummy!

First grilled chicken of the season Smile BBQ chicken, corn, and sweet tater!

Travis passed his Praxis test (for science teaching!) and I felt good about my interview so we went to Ruby Tuesday’s yesterday for dinner.  Favorite salad ever! Thanks for the well wishes on my interview!  No placemat there haha.

Turns out that my lunches are always boring: salad.  But at least I’ve had yummy cookies for dessert.  I was inspired by Liz and Alysia!

Chocolate Chip Banana Cookies

  • 1 cup oats
  • 2 ripe bananas
  • ~1/4 cup chocolate chips

Preheat oven to 350.  Mix all ingredients together well, spoon onto a greased baking sheet, and bake for 15 minutes.  The end.  Easy as pie (or cookies in this case…). I got 12 nice-sized cookies out of it, for approximately 50 calories each!

Nothing too special this week.  I have been lacking motivation to make food with coaching and this interview on the mind.  I see a lot more Crock Pot meals in our future!

Weekly Eats!

Thank you all so much for the awesome comments on my race recap yesterday! So happy to have another race under my belt, and I’m itchy to run again! Legs need to lose some soreness and I hope to hit the road or trail soon!

As per usual, I typically wait until Wednesday to fill you in on my eats! Today is no exception! Let’s start with last week.  We made a trip to Sam’s last weekend and found the most amazing chicken ever.  Spinach and artichoke STUFFED CHICKEN.  Oh my goodness – talk about amazing!

Paired with some carrots and a salad … simply perfect.

On the way to Pittsburgh, I fueled up for the long drive with some Wawa coffee!

Horrible picture alert! After the race, not only did I down so many tortilla chips, but I had a chicken mole burrito at Mad Mex.  LOVE THEIR FOOD SO MUCH!

On the way back from Pittsburgh, we stopped at Wendy’s.  ALL I wanted was a plain baked potato with ketchup, but they didn’t have any baked potatoes Sad smile. I got their new grilled chicken flatbread, without the ranch dressing and with ketchup.  It had a piece of asiago, a piece of bacon, chicken, and lettuce.  Pretty delicious for fast food!

Last night we had Taco Tuesday! Turkey tacos with rice, olives, peppers, corn, lettuce, and cheese! Sooo yummy Smile

As per usual, I had a salad for lunch pretty much every day, and I had either eggs or oatmeal for breakfast.  I think you can make out what that looks like!

It’s MAY?!

Can you believe we are in MAY now??? May is the last full month of work, and I have two races that I hope to complete.  Pittsburgh 1/2 on Sunday and the DC Color Run on the 19th!

May is one of my favorite months.   The weather starts to be consistently nice, and summer is right on the horizon.  Plus, it’s not TOO hot.  Because it’s one of my favorites, I’ll show you some of my favorite foods, all of which have been consumed in the past week.

PANCAKES.  Travis and I have the jumbo box of Bisquick.  AKA pancakes all the time!

CHIPOTLE.  Pretty much the tastiest thing ever.  Their salads are the bomb.  And tortilla chips.  So many tortilla chips.

PIZZA.  Because ordering pizza on the daily could be extremely expensive, we often make it with things like wraps.  As long as there is cheese and olives, I’m ok with it!

CHICKEN AND RICE: Travis and I picked up a rotisserie chicken at Sams this past weekend.  We had a voucher for a free one, but they screwed it up and we ended up having to pay anyway. Oh well, totally yummy, especially with some rice!

PULLED PORK!  We also got JUMBO pork shoulder at Sams.  I’m talking enough pork to feed an army.  I stuffed the shoulder into my Crock-Pot until it finally allowed me to close the lid.  After adding a can of root beer, the pork cooked all day and was PERFECT for dinner. Drain the liquid, add some BBQ sauce, and shred it to perfection.  Put it on a pita and call it heaven. Pork for DAYS!

CHOCOLATE.  One of my students was selling candy bars for a fundraiser last week and I had to buy one. So amazing. Caramel + chocolate. YUM.

Add in some ice cream, and I could honestly live on these things alone.  So perfect. 

Those are just some of the eats I’ve had lately.  Throw in some cereal, eggs, more pork, salads for lunch, fruit, and Goldfish.  That’s pretty much all I eat.
